We grill shellfish.

Tucked into a corner of Tsukiji’s outer market — an oyster shack. You grab shell-on oysters, scallops and clams and grill them yourself, hard and fast. Steam them in the can over the charcoal and the steam billows up, thick with the smell of the sea. By day, the open-air counter is running too.

Gangan-yaki (Can-Steamed Shellfish)
